Roasted Eggplant Salad

½ tsp turmeric
1 tsp chili powder
1 tsp cumin
1 tsp Black pepper
½ tsp salt
Mix together in bowl.

1 cup yogurt
½ cup buttermilk
1 garlic clove, minced
? tsp chili powder
? tsp black pepper
¼ tsp cumin
¼ tsp coriander powder
¼ tsp salt
2 tsp chopped parsley
Mix together in separate bowl.

Preheat oven to 425. Cut eggplant in ¼ inch rounds. Place on foil lined baking tray. Spray or coat with oil. Sprinkle spice mix on either side. Bake about 15-20 min., until golden brown. Set aside until cool to touch. Cut into half moons. Toss with dressing, top with parsley. Serve with Basmati rice and a cucumber salad.

Roasted New Potatoes
Heat oven to 425. Position rack in lowest position. Toss potatoes with salt and pepper and olive oil. Roast for twenty minutes. Toss with fresh herbs.
